First, find your knife’s angle using the gauge—start at 21 degrees, place the blade flat against the straight side of the V, and slide it down gently. Drop to the next lower angle until it stops without falling into the hole at the bottom. That’s your angle. Always start with the ceramic honing wheels—pull the knife through ten times. Then use the diamond wheels five to seven times. For a brand-new edge, finish with the tungsten rods three to five times. Light pressure, one side at a time.
